Aviyal(Avial) is a traditional stew, which has the mixture of rich vegetables and coconut. This will be part of our lunch menu for all the festivals as well as when special guest visiting us.

Ingredients:
Raw Banana
Bringal
Carrot1
Cucumber/Ash Gourd1 small piece
Potato1
Snake Gourd1 small piece
SaltTo Taste
Turmeric PowderA pinch
TamarindSmall Gooseberry size

For Grinding:
Grated Coconut1/2 cup
Green Chilies3
Red Chilies1
Cumin Seeds1/2 teaspoon

For Seasoning:
Coconut Oil (preferably) 3 table spoon
Curry LeavesFew

Method:
  1. Soak the tamarind in water and extract the juice
  2. Chop all the vegetables length wise and cook all the vegetables in a heavy bottomed pan by adding little water and turmeric and salt.
  3. Grind the cocunut, green chillies, red chillies and cumin seeds in a mixer without adding water.
  4. Add the tamarind extract and let the vegetables are fully cooked
  5. Now add the ground mixture and mix well. 
  6. Finally add coconut oil and curry leaves and mix well.
  7. Now the yummy Aviyal is ready to serve with Rice
  8. Tips: Instead of tamarind we can also add 2 spoon curd.
