We can cook the same rice in pressure cooker. Follow all the process from step 1 to till you add rice. Water ratio should be 1:1 for pressure cooker and cook in low flame for 20 mins to get fluffy rice. We can also use Instant pot to make this Tomato Capsicum rice. Switch on the IP in saute mode and follow the process from step 1 to till we add rice. Then add 1.5 cups of water and cancel the saute mode. Close with lid with Vent in “Sealing” position and cook in Manual/pressure cook mode for 4mins. Once done, NPR for 10mins and then force release the pressure.

Ingredients
- 1 Cup Basmati Rice 1 Cup - 250ml
- 3 Tomato Cubed
- 1 Green Capsicum Cubed
- 1 Onion Finely Chopped
- ¼ Cup Green Peas
- 1 Potato Peeled, Cubed
- 1 tsp Ginger Chopped
- ¼ tsp Turmeric Powder
- 1 tbsp Coriander Leaves For Garnishing
- 2 Cups Water
- 1½ tsp Salt
For Tempering
- 3 tbsp Oil
- 1 Bay Leaf
- 1 inch Cinnamon Stick
- 2 Cloves
- 3 Green Chili Slit
Instructions
- Rinse the basmati rice in water and soak it in water for half an hour. Chop the onions, tomatoes, capsicum and green chillies finely and keep it aside. Wash and peel the potato and chop it into cubes. Heat a pan and add oil.
- When the oil is hot, add bay leaf, cinnamon stick, cardamom, cloves, curry leaves and chopped green chillies and fry for a minute. Add the chopped ginger and fry for a second
- Then, add chopped onion along with a pinch of salt and saute it till they turn translucent. Then add chopped tomatoes and add saute the tomatoes.
- Add the turmeric powder, green peas and then potato cubes and mix well.
- When the tomatoes are half-cooked, add chopped capsicum and give it a good stir. Drain the water from the basmati rice and add it to the pan.
- Stir fry the rice for 3 minutes in high flame. Add chopped coriander leaves to the pan
- Finally add 2 cups of water and allow it to boil. When 3/4th of the water is evaporated, keep the flame low and cover the pan with a lid till they rice is cooked fully and becomes fluffy. Do not stir the rice frequently, then the rice would become mushy. Remove the yummy tomato capsicum rice from flame
- The delicious Andhra Tomato Capsicum Rice is now ready to serve with any raitha!
