Sweet Potato Stir Fry (SakkaraVelli Kizhangu Poriyal) |
Ingredients:
Sweet Potato | 4-5 medium sized |
Turmeric Powder | 1/4 teaspoon |
Red chilli powder | 1/4 teaspoon |
Hing | a Pinch |
Grated Coconut | 1 tablespoon |
Salt | To taste |
Curry Powder | 1 teaspoon |
For Seasoning:
Cooking oil | 2 teaspoon |
Mustard seeds | 1 teaspoon |
Split Urid dal | 1/2 teaspoon |
Curry leaves | few |
Method:
- Wash and peel the sweet potatoes and chop it into small cubes and soak it in water
- Heat oil in a pan and add mustard seeds when the oil is hot. When the mustard seeds starts to sputter, add cumin seeds and when the cumin seeds starts to sputter, add uriddal and curry leaves and stir well for 10 seconds
- Add the chopped sweet potatoes and stir fry in high flame for 2 minutes along with hing and turmeric
- Keep the flame in medium and stir occasionally and allow the sweet potatoes to cook completely. When the sweet potatoes are cooked completely, add curry powder and mix well and keep in low flame for 2 minutes. Finally add grated coconut and stir fry in high flame and then remove from flame
- The delicious Sweet Potato Stir Fry (SakkaraVelli Kizhangu Poriyal) is ready to serve with hot rice
