Iyengar Bakery’s many recipes are so popular and so tempting. There are lots of modern bakery’s nowadays still people’s love towards Iyengar’s bakery for its authentic foods never cease. This Khara Biscuits or savoury Masala cookies are one such jewel in the crown. A hot cup of tea / coffee with 2 Khara Biscuits is a yummy treat for a wonderful evening. Unlike the sugary cookies, this is a savoury variety with our Indian spices. The coriander leaves adds a nice flavor to the cookies. We can store Khara Biscuits in an air-tight container and biscuits will stay fresh for 3-5 days.
How to bake the cookies using Pressure Cooker ?
I know some of us have no Oven in the home. Like we make pressure cooker cakes, we can pre-heat the pressure cooker with 2 cups of salt/sand. Place a perforated plate upside down and keep a flat bowl on top of the perforated vessel upside down and heat the cooker with lid (without whistle / gasket) for about 10mins. When our cookies are ready to be baked, place in a round baking tray and keep inside the cooker and cover and cook in high flame for 10-12 minutes. Scrumptious Khara Biscuits will be ready for our evening .
Tips for making Khara Biscuits:
- Sieve the dry ingredients thoroughly to get rid of any lumps.
- We can use 2 cups of maida or 2 cups of wheat flour instead of 1:1 ratio.
- Along with the green chili, we can also use grated ginger and hing.
- Use softened butter at room temperature for this recipe.
- Pricking the cookies with fork helps to cook better and crunchy.
- Bake the cookie till the top of the cookies turn light brown. Do not over cook as it become very hard on cooling.
- Allow the cookies to cool down completely before storing in air-tight container.

Iyengar Bakery Style Khara Biscuit | Savory Masala Cookies
Equipment

Ingredients
- 1 cup Wheat Flour 1 Cup - 250ml
- 1 cup Maida (All Purpose Flour)
- 1 tsp Salt Adjust As Needed
- 1 Pinch Baking Soda
- 1 Pinch Baking Powder
- 1/3 cup Butter
- 6-7 nos Green Chilli
- 1/2 cup Coriander Leaves
- Few Curry Leaves
- 4 tbsp Curd (Plain Yogurt)
- 2 tbsp Sugar

Sieving Dry Ingredients
- Sieve the ingredients - maida, wheat flour, salt, baking soda, baking salt thoroughly
Incorporate Spices!
- Add softened butter (butter on the room temperature),sugar, chopped green chillies, coriander leaves, curry leaves and mix everything together till the butter is nicely incorporated and the flours become like bread crumbs.
Dough Preparation
- Combine all the ingredients in the bowl and slowly knead them together to a stiff dough. If you are not able to make a dough, we can add more curd / yogurt till we get a stiff dough. But add a teaspoon of curd at one point of time and adjust if needed. Also do not over knead the dough as it will affect the aeration process and the biscuits will become hard while baking. So gently knead and once you get a dough, stop the kneading process. Let the dough sit for 15 mins.
Pre-heating the oven
- Pre-heat the oven to 350 Degrees F / 170 Degrees C
Roll & Cut Biscuits
- After 15 mins of resting, take the dough. Cut into 2 portions. Roll each portion to 1/2 cm thickness. Using a cookie cutter or a sharp lid, cut out the rolled dough into round shaped cookies.
- Using a fork prik the cookies to make holes. Arrange the cookies in the lined Cookie Tray (i forget to show this step in the video)
Baking Time!
- Bake the cookies in pre-heated Oven for 10-12 minutes. When the cookies are very light brown in the top, take it out from the oven. Do not over bake the cookies, that will harden the biscuits/cookies. Transfer the baked biscuits to a cooling rack and allow it to cool
Serving time!
- Serve the delicious Khara Biscuits with hot tea / coffee and enjoy your evening!
