Green Chutney and Sweet Chutney Recipes for Chaat

Green chutney and Sweet chutney are the two key ingredients in most of the Indian Chaat dishes. Both the recipes are very simple to make at home and shelf life is couple of weeks if we refrigerate. We can make yummy chaat dishes for a wonderful evening making use of these chutneys.

Lets now see the recipe of these chutneys. 

Green Chutney:

Green Chutney is one of the key ingredient in most of the Indian Chaat dishes and also for sandwiches. I have seen many of the North Indians prepare green chutney in large quantity and refrigerate it and it will be handy for them to just take it out from fridge and add it to the chaat dishes or sandwiches. Green chutney is easy and quick to prepare all we need is mint and coriander leaves.

Preparation and Yield:

Ingredients:
Coriander Leaves1 Cups**
Mint Leaves1 Cup
Green Chilli2
SaltTo taste
Sugar1/2 teaspoon
Chaat Masala Powder(Optional)1/4 teaspoon
Lemon Juice1/4 teaspoon


Method:
  1. Wash the coriander and mint leaves and add it to the mixer along with green chilli, salt, sugar and chaat masala. Grind all these to a nice paste. Finally add lemon juice to the ground chutney and mix well.

  2. Store the green chutney in an air-tight container and refrigerate it. Shelf life for this yummy chutney is two weeks as we are refrigerating.

Sweet Chutney (Conventional Method):

Sweet Chutney is another key ingredient in most of the Indian Chaat dishes. Tamarind and Dates are the key ingredients for this chutney. Like green chutney, we can also make sweet chutney and refrigerate and use it whenever we prepare chaat dishes.

Preparation and Yield:
Preparation time10 mins

Ingredients:
Tamarind1 big lemon size
Grated Jaggery1/4 Cup
Dates1/2 Cup
Chaat Masala Powder(Optional)1/4 teaspoon


Method:
  1. Add dates to a pan along with 1/2 cup of water and boil till they become tender. 

  2. Allow the cooked dates to cool off and then add it to the mixer and grind it to a nice paste

  3. Heat a pan and add the tamarind juice and allow it to boil for 5 minutes to get rid off the raw smell. Then add grated jaggery and allow the jaggery to get dissolved in tamarind juice. 

  4. When the tamarind and jaggery mixture boils for a couple of minute, add the dates paste and mix well. Add the chaat masala and stir well and bring it to boil and remove from flame.

  5. Cool off the sweet chutney and Store the sweet chutney in an air-tight container and refrigerate it. Shelf life for this yummy chutney is two weeks as we are refrigerating.

Sweet Chutney (Instant Method):
We can also prepare this sweet chutney very quickly just by using tamarind, jaggery and chaat powder. Just extract the tamarind juice and add grated jaggery and boil it for 5 minutes to get rid off the raw smell and finally add chaat powder mix well and thats it, sweet chutney is now ready. This is the method restaurants prepare when they want sweet chutney instantly.
