Kovakkaai Fry(Kovakkaai Vadhakal) is a mouth-watering yummy poriyal. In these days, we are blessed with nonstick pan, hence we don't need to worry about oil for frying these vegetables. In my childhood days, my mom used to fry the vegetables in iron pan where she need to pour more oil and fry them. Even after adding more oil, sometimes the vegetables tend to stick to the pan. But with these non-stick pans in use, we use only less oil and we get richly fried vegetables.Try this yummy recipe and let me know your comments!!!

Ingredients:
Kovakkaai(Ivy Gourd) | 1/2 Kg |
Salt | To Taste |
Coriander Powder | 1 /2 teaspoon |
Red Chilli Powder | 1/2 teaspoon |
Cumin Powder | 1/2 teaspoon |
Turmeric Powder | 1/4 teaspoon |
Oil | 1 tablespoon |
Ingredients for Seasoning:
Oil | 1 teaspoon |
Mustard seeds | 1 teaspoon |
Urid Dal | 1 teaspoon |
Method:
- Clean the Kovakkaai(Ivy Gourd) under running water and chop them vertically
- Heat oil in a pan, add mustard seeds. When the mustard seeds starts to sputter, add urid dal and fry it till it becomes golden brown color
- Add chopped Kovakkaai(Ivy Gourd) and mix well. Add 1 tablespoon of oil for the Kovakkaai(Ivy Gourd) to fry
- Now add turmeric powder, coriander powder, red chilli powder, cumin powder and mix well
- Keep the flame in medium and allow the Kovakkaai(Ivy Gourd) to fry completely. Mix it occasionally every 3-4 minutes
- When the Kovakkaai(Ivy Gourd) is almost fried, keep the flame in low and allow for deep fry
- The yummy Kovakkaai(Ivy Gourd) fry/Kovakkaai(Ivy Gourd) Vadhakal is ready to serve. This goes well with Sambar rice and also fantastic combination for curd rice.

- We can add finely chopped onions after seasoning and then add kovakaai and fry it. Onions are optional
- Adding Fennel seeds is also optional and it adds good flavour to the fry
- We can finally add nicely fried grated coconut and mix well that will be more tastier too
