Avarakkai (Broad Beans) is a healthy vegetable rich in dietary fiber. We can do many dishes using broadbeans. Here is the simple curry recipe which goes well with any sambar or kuzhambu variety. In particular, avarakkai poriyal (Broad Beans Poriyal) is a very good accompaniment for Bittergourd Pitlai.

Ingredients:
Broad Beans / Avarakkai250gms
Turmeric Powdera Pinch
SaltTo Taste
Grated Coconut1 tablespoon


For Seasoning:
Oil1 teaspoon
Mustard Seeds1 teaspoon
Split Urid dal1 teaspoon
Red Chilli

Method:

  1. Wash and finely chop the broadbeans. Heat oil in a pan, add mustard seeds when the oil is hot. When the mustard seeds starts to sputter, add split urid dal and broken red chilli and fry them till the dal turns golden brown color

  2. Now add chopped broad beans to the pan and add turmeric powder and salt and stir-fry them for couple of minutes. Then sprinkle some water and cover the pan with lid and allow the broad beans to cook completely

  3. Stir occasionally and check if the beans needs more water to cook. If so sprinkle some more water and cook till the broad beans are soft and tender. Finally add grated coconut and mix well and keep in flame for a minute  and then remove from flame

  4. Serve this yummy and simple Avarakkai Poriyal with any rice varieties.
