Ulli Vada (Onion Vada)

Ulli Vada is a famous snack in my town Nagercoil and also in Kerala and so I make this very often. A very simple evening snack which can be done within 10 minutes. A cup of hot tea / coffee with 5-6 ulli vada, a perfect combo for a nice evening.

Ingredients:
Onion
Green Chillies2
Gram Flour / Besan Flour1/2 Cup
Rice Flour1/4 Cup
Red Chilli Powder1/2 teaspoon
SaltTo taste
Turmeric Powder1/4 teaspoon
Chopped Coriander Leaves1 tablespoon
Curry LeavesFew
OilFor frying


Method:
  1. Finely chop the onions vertically and add 1/2 teaspoon of salt and keep it aside for 5 minutes. The adding of salt brings out the moisture from onions which is used to mix the flours

  2. Finely chop the green chillies and add it to the chopped onions

  3. Add besan flour, rice flour, red chilli powder, salt, turmeric powder, coriander leaves and curry leaves to the onion and mix well and knead it nicely only using moisture from onions. We should not add any water. The moisture content in onions is enough to get a thicker dough

  4. Heat oil in a pan. Test the hotness of oil by adding a pinch of dough. If it sizzles up immediately, then the oil is in the right hotness
  5. Take small amount of dough and make it a ball and drop it gently in the oil. Repeat this for atleast 8-10 balls

  6. Keep the flame in medium and fry the vadas evenly in all sides

  7. Remove the fried ulli vadas from oil and place it in a plate having paper towel to drain the excess oil

  8. The yummy, spicy and crispy Ulli Vada (Onion Vada) is ready to Serve with Hot Tea / Coffee. We can make Coconut chutney or Coriander-Curry leaves chutney and serve with Ulli vadas
