Traditional Maharashtrian rice is an amazing combination of spicy flavours. The main flavor is from Goda Masala which is readily available in most of the shops. We can even use garam masala instead of Goda Masala but authentic Masala Bhat has Goda masala in it which has some more unique ingredients in addition to conventional garam masala,. This is a one pot meal and a perfect potluck dish too.

Ingredients:
Rice | 1 Cup* |
Finely Chopped Onion | 1 Cup |
Potato | 2, Cubed |
Brinjal | 4-5, Sliced |
Rice | 1 Cup* |
Curry Leaves | Few |
Grated Ginger | 1 Teaspoon |
Turmeric Powder | 1/4 teaspoon |
Goda Masala | 1 Tablespoon |
Red Chilli Powder | 1 teaspoon |
Turmeric Powder | 1/4 teaspoon |
Green Peas | 1 Tablespoon |
Salt | To taste |
Grated Coconut | 1 Teaspoon (For Garnishing) |
Finely Chopped Coriander Leaves | For Garnishing |
* 1 Cup = 250ml
For Tempering:
Oil | 2 Tablespoon |
Mustard Seeds | 1 Teaspoon |
Cumin Seeds | 1 Teaspoon |

Method:
- Wash and Soak the rice for 15 mins
- Heat oil in a pan. Add mustard seeds and allow it to sputter. Add cumin seeds and allow it to sputter too
- Then, add curry leaves and saute for few seconds. Next, add finely chopped onions and saute the onions till translucent. Add grated ginger too and saute along with onions
- Once the onions turn translucent, add goda masala, red chilli powder, turmeric powder and mix well. If you dont have Goda masala we can substitute with garam masala. Goda Masala is available in all Indian Grocery shops
- Next we need to add cubed potatoes and sliced brinjals and toss them well with onion and masalas
- Then drain water from soaked rice and add it to the pan and stir-fry for a minute
- Add 2 cups of water along with salt and gently give a mix without breaking the rice
- Bring water to boil and Cover and cook in low flame for about 10-12 minutes or till the rice becomes soft but not mushy
- Garnish with freshly grated coconut and chopped coriander leaves
- The delicious Masala Bhaat ready to serve!
