Sprouted Horsegram Masala curry is a delicious Indian recipe served as a Side-Dish for Roti or mainly with Ragi Mudde (Kezhvaragu Kali). This is a a very healthy and tasty curry. Horsegram itself is so full of nutrients and we are making them sprouts which is even more healthier. Also this curry has a rich flavor of coconut and coriander leaves. Most of the SouthIndian knows Horsegram helps in weight reduction as it is rich in protein and it will make us feel heavy thus preventing us to take any junks or other snacks.
Horse Gram (Kollu), is one of the healthier legumes normally recommended as part of a iron rich diet. Sprouting the horsegram will enhance the protein content in it. Most of the Indian Vegetable shops sell sprouted Horesegram, we can get those and make this curry in a very quick time. Or we can make the horsegram sprout at home. If the season is winter, it will take atleast couple of days for the horsegram to sprout. If you have a convection oven, we can keep the wet potli of horsegram inside oven and switch on the oven light to keep it warm so it will sprout quickly. If it is summer, we can keep the potli in a warm place and it will sprout quickly. This Sprouted Horsegram Masala Curry is a perfect side dish for idli, dosa, roti and also for rice.
