Bombay Grilled Vegetable Sandwich | Mumbai Veg Sandwich, one of the most popular Street side chaat in Mumbai. Like Bhel puri, Vada Pav, Pav Baji, Sandwich also holds a very unique place in Mumbai Street foods. This Mumbai Sandwich, is grilled, full of vegetables, melted cheese with spicy green chutney. Usually we can find the same set of vegetables like tomato, potato, onion, cucumber, capsicum in any sandwich stall. Also they use soft white bread. At times, we can give up our diet to try this yummy Grilled Veg Sandwich :-). Each sandwich stall adds their own magic of ingredients. Many stalls add fine Sev to grilled sandwich.
Mostly its a 3 layered sandwich in most of the stalls with richness of vegetables, cheese and spicy green chutney. The chaat masala they use is a combination of most of these ingredients like Cumin, Black salt, Black Pepper, Fennel, Clove, Cinnamon, Amchur, Chili powder, rock salt, Star Anise. I got store bought Sandwich masala which I used for this recipe. This is a complete meal we could have for breakfast, evening snacks or for brunch!

Equipment
- Sandwich Maker / Panini Maker
Ingredients
- 3 Bread Slices
- 1 Potato Boiled, peeled
- 1 Onion Finely Chopped
- ½ Green Capsicum Finely Chopped
- 1 Tomato Cut into Rings
- 2 tbsp Green Chutney
- 1 tsp Chaat Masala
- ½ Cup Grated Cheese
- 1 tbsp Butter
Instructions
- Take 3 and arrange in a chopping board or clean surface. To one side of the bread, apply green chutney and spread it nicely
- Then slice cooked potato and arrange it on top of the green chutney spread.
- Sprinkle chaat masala around the sliced potatoes. Next, add chopped onions on top of the potatoes.
- Take another bread, spread butter on one side and keep that butter spread side on top of the onions. To the other side, spread green chutney
- Now, keep the tomato slices on top of the green chutney spread of the second bread. On top of the tomato, add chopped green capsicum pieces
- Again sprinkle chaat masala all over the capsicum pieces. Now add handful of grated cheese on top of the capsicum
- Take another bread. Apply green chutney on one side and keep that green chutney spread side on the cheese
- Now apply butter on to the top bread. Now our 3 layered veg sandwich is ready to be grilled
- Heat a panini maker or sandwich maker. Once the indicator shows "Ready", Apply little butter on placeholder where we need to keep the sandwich
- Gently place our layered sandwich inside the sandwich maker. Close it gently without putting more pressure. Allow the sandwich to get grilled and the indicator turns to "Green" to take it out.
- Take out the grilled sandwich, cut it into halves or 4 pieces and serve with Ketchup or any dip of your choice!
