Chettinad Vellai Appam | Vellai Paniyaram Recipe

Chettinad Vellai Appam or Paniyaram is a deep fried snack very popular in chettinad cuisine. Raw rice is soaked with urad dal which is then grind to batter and deep fried to get crispy and tasty vellai appam. These vellai appam are crispy outside and soft inside. Very easy to make evening snack! Unlike other deep fried snack, this Vellai Appam is on healthier side and its filling too. Chettinad cuisine is always famous for its spice level. This vellai appam doesn’t have any spice. So compensate the spice factor, this appam is served with hot and spicy Kara chutney or milagai thogayal.

Tips for making Chettinad Vellai Appam:

  1. We have made this appam with 1 cup raw rice. We can use 3/4 cup raw rice and 1/4 cup parboiled rice.
  2. No need to ferment the batter. We have to use the batter immediately.
  3. After adding baking soda, do not keep the batter aside as it dilutes the batter very much.
  4. Use a small ladle to pour the batter in oil. We have to cook one appam at a time.
  5. Splash oil on the appam so it gets puffed up.
  6. Instead of adding water to grind the soaked rice+dal we can use milk or coconut milk too.

Equipment

  • Mixer Grinder
  • Heavy Bottomed Pan
  • Mixing Bowl

Ingredients

  • 1 Cup Raw Rice 1 Cup - 250ml
  • 2 tbsp Urad Dal
  • 1 tsp Salt
  • ¼ tsp Baking Soda
  • 2 Cups Oil

Instructions

  • Take rice and urad dal in a mixing bowl. Add water and wash the rice and dal thoroughly.
  • Add fresh water and soak for 3 hours.
  • After 3 hours, drain water from soaked rice+Dal and take it to mixer jar.
  • Add water and grind it to a smooth batter like a dosa batter consistency.
  • Take the batter in a bowl. Add salt, baking soda and stir well. Vellai Appam batter is now ready.
  • Heat 2 cups of oil in a pan. When the oil is hot, take a small ladle of vellai appam batter and pour in oil. Splash the oil on the appam. The appam will rise in oil.
  • Flip and cook the appam on the other side in low flame. Take out the cooked appam and repeat the same for the rest of the batter.
  • Vellai Appam is now ready to serve! Relish with Kara Chutney and enjoy this snack!!
