Vegetable Masala Oats Porridge, a very healthy and tummy full breakfast for a wonderful morning. Adding vegetables and masala makes the simple oats porridge rich in taste and flavor. Even nutritionist also suggest us to take different form of oats instead of simple oats porridge with milk or yogurt. So These different varieties would encourage us to consume oats at regular intervals. I have seen many kids including my daughter who doesn't prefer oats because of its sticky nature when cooked. But adding vegetables and masala make them to like oats and we are anyways enriching them with vegetables and hence it is healthy for them also.

Ingredients:
Oats | 1 Cup |
Onion | 1 |
Carrot | 1 |
Peas | 1 tablespoon |
Green Chilli | 1 |
Chopped Ginger | 1 teaspoon |
Curry Leaves | Few |
Water | 2.5 Cups |
Salt | To Taste |
For Seasoning:
Oil | 1 teaspoon |
Mustard Seeds | 1/2 teaspoon |
Cumin Seeds | 1/2 teaspoon |
Vegetable Masala Oats Porridge |
Method:
- Finely chop onions and keep it aside. Wash and peel the skin of carrot and finely chop it and add green peas to it and keep it ready. Heat a pan and add oil. When the oil is hot, add mustard seeds and when the mustard seeds starts to sputter add cumin seeds and fry for 5 seconds and then add chopped green chillies, ginger and curry leaves and fry for another 10 seconds
- Then add chopped onions along with a pinch of salt and saute it till the onions turn transparent. Then add oats and fry for 3-4 minutes in a medium flame
- Then add green peas and chopped carrots and stir fry them in medium-high flame till the carrots become tender
- Then add water and required salt and keep the flame low. Allow the oats and the vegetables to cook completely in water. It will take 5-6 minutes till the oats gets cooked and the mixture becomes a nice porridge consistency
- The yummy vegetable masala oats porridge is now ready to serve hot.
