Tomato Soup

Home made Tomato Soup is a healthy appetizer. It is one of the favourite Soup for all age groups starting from kids to elderly people. We may wonder whether we get the same taste as we have it Hotels. But I would like to mention that we would surely have the same taste, even more tastier when we try it in our home. Ingredients:
Tomato10
SaltTo Taste
Pepper 1/4 teaspoon
Oil1 teaspoon
Butter1 teaspoon
Bay leaves
Onion1
Chopped Garlic1 teaspoon
Carrot
Corn Powderteaspoon
Fresh Cream1 tablespoon
Bread Crutons 15

Method:
  1. Chop the tomatoes to medium sized cubes and keep it aside

  2. Heat a pan, add oil and butter.

  3. When the oil is hot, add bay leaves and fry for 10 seconds

  4. To this add chopped onion and garlic and fry it till it turns transparent. You can add a pinch of salt to fry the onions evenly and quickly

  5. Now add chopped Carrot and fry for 2 minutes

  6. Finally add chopped tomatoes and mix well

  7. Add salt and whole black pepper and allow the tomatoes to fry for 2 minutes

  8. Add 2 cups of water and allow the tomatoes to cook completely. Keep the flame in medium

  9. After 5 minutes, remove the tomatoes from flame and strain the cooked water in strainer and take the rest of tomato-onion cooked pieces in a mixer

  10. Grind the tomato-onion-garlic to a nice paste by adding 1 cup of cold water

  11. Heat the pan again and add the strained cooked water along with the ground tomato puree and mix well

  12. Add required salt, pepper powder and keep in flame for 10 more minutes. The consistency would be thick now, again remove the tomato soup mixture from flame and strain again to get a clear soup 

  13. Again keep the strained tomato soup mixture in flame and allow it to boil for 5 more minutes. Mix the corn flour in 1 tablespoon of water and dissolve it and pour that in the boiling tomato soup mixture and mix well. This will bring a thicker consistency to the soup

  14. Finally add fresh cream and mix well and switch off the flame.
  15. Take a bowl and add bread croutons. Add tomato soup to the bowl. Again add 1 teaspoon of fresh cream and serve the yummy piping hot Tomato Soup

Note:

  • Always use fresh red ripe tomatoes to get more tastier soup
  • You can also add a pinch of red chilli powder to get a good color
  • Fresh cream and corn powder are optional. We can serve the soup as a thin consistency also
  • Always prepare the soup and serve it as hot piping soup
  • If you don't have ready made bread croutons, you prepare the same in home. Take 4-5 bread slices and chop it to small cubes. Heat a tawa, add olive oil or ghee and add the bread pieces along with salt and toss it till it is crispy. We can use these crispy home made bread croutons while serving tomato soup
