Thinai (Foxtail millet) is a healthy and nutrition rich millet. I have given its benefits in my other posts. Such a wonderful millet should be our day to day ingredient in our kitchen. We can make lots of dishes using this healthy millet. The dishes which we prepare using rice can be substituted with Thinai. Generally during festivals, my MIL would make Kadalai Paruppu Pradaman or Moongdal Pradaman. Instead of these conventional payasam dishes, today I tried Thinai Pradaman and it turned out amazingly tasty and yummy and my MIL loved it so much. Ingredients:
Foxtail Millet (Thinai) | 2 tablespoon |
Thick Coconut Milk | 1/2 Cup |
Thin Coconut Milk | 1 Cup |
Grated Jaggery | 1/2 Cup |
Cardamom Power | 1/2 teaspoon |
Cashews | 5-6 |
Chopped Coconut Bits | 2 tablespoon |
Ghee | 2 teaspoon |

Method:
- Heat a pan, add a teaspoon of ghee and saute the thinai in low flame for about 5 minutes to get rid off the raw smell. Take the thinai in a vessel and add water to it and pressure cook it
- Allow 3-4 whistles and once cooked, mash the thinai and keep it aside. Heat a pan and add jaggery along with a tablespoon of water
- Allow the jaggery to completely dissolve and then strain the jaggery juice to get rid off the sand or other dust particles. Again keep the strained jaggery juice in the flame and add the mashed thinai to it and mix well and bring it to boil in low flame
- I have grated 1 coconut full and added 1/2 cup of water to it and grind it and squeeze out milk and keep it aside. This is the thick milk. Again add the ground coconut to the mixer and add 1.5 cup of water and grind it to get thin milk. Add cardamom powder and mix well. To this now add thin coconut milk. Allow the pradaman to boil in low flame for 5 minutes. Then add the thick coconut milk and immediately switch off the flame and then stir well
- In another pan, add ghee and add cashews and roast them till they are golden brown color. Take this roasted cashews aside. In the same pan add chopped coconut bits and fry them till they are golden brown color. Add these roasted cashews and coconut bits to the pradaman and stir well
- The tasty and healthy Thinai Pradaman (Foxtail Millet Kheer) is now ready to serve!
