Ingredients:
Bottlegourd 2 Cups* Chopped
Onion2 Medium finely chopped
Tomato1 big chopped
SaltTo taste
Red Chilli Powder1/2 teaspoon
Turmeric Powder1/4 teaspoon
Chopped Coriander LeavesFor Garnishing

* 1 Cup = 250ml

For Grinding:

Grated Coconut4 Tablespoon
Poppy Seeds2 Teaspoon
Cashews5-6
Fennel Seeds1/2 Teaspoon
Green Chilli
Ginger1 inch piece
Garlic Cloves2
Cloves4
Cardamom 2
Peppercorns8
Roasted Channa Dal1/2 Tablespoon

For Seasoning:
Oil / Butter4 Tablespoon
Cumin Seeds1 Teaspoon

Method:
  1. Wash and peel and chop the bottlegourd into small cubes and set it aside
  2. Soak the poppy seeds and cashews in hot water and set it aside for 10 minutes

  3. After 10 minutes, Take rest of the grinding ingredients along with soaked and drained poppy seeds and cashews and grind it to a fine paste

  4. Heat a cooker, add oil / butter. Add cumin seeds and allow it to sputter. Add chopped onion and saute till they are transparent

  5. Add chopped tomato and saute till they are mushy. Add ground masala and mix well

  6. Add 1 cup water and stir well. Add turmeric powder, red chilli powder and salt and stir well. Add chopped bottlegourd along with 1 Cup water and close the cooker with lid and add the weight.

  7.  Pressure cook allowing for 3-4 whistles. After the pressure is fully released, garnish the kurma with coriander leaves 

  8. Serve the delicious Bottlegourd Kurma with Indian Bread like Roti, chapati etc
