Ingredients:
Bottlegourd | 2 Cups* Chopped |
Onion | 2 Medium finely chopped |
Tomato | 1 big chopped |
Salt | To taste |
Red Chilli Powder | 1/2 teaspoon |
Turmeric Powder | 1/4 teaspoon |
Chopped Coriander Leaves | For Garnishing |
* 1 Cup = 250ml
For Grinding:
Grated Coconut | 4 Tablespoon |
Poppy Seeds | 2 Teaspoon |
Cashews | 5-6 |
Fennel Seeds | 1/2 Teaspoon |
Green Chilli | 2 |
Ginger | 1 inch piece |
Garlic Cloves | 2 |
Cloves | 4 |
Cardamom | 2 |
Peppercorns | 8 |
Roasted Channa Dal | 1/2 Tablespoon |

Method:
- Wash and peel and chop the bottlegourd into small cubes and set it aside
- Soak the poppy seeds and cashews in hot water and set it aside for 10 minutes
- After 10 minutes, Take rest of the grinding ingredients along with soaked and drained poppy seeds and cashews and grind it to a fine paste
- Heat a cooker, add oil / butter. Add cumin seeds and allow it to sputter. Add chopped onion and saute till they are transparent
- Add chopped tomato and saute till they are mushy. Add ground masala and mix well
- Add 1 cup water and stir well. Add turmeric powder, red chilli powder and salt and stir well. Add chopped bottlegourd along with 1 Cup water and close the cooker with lid and add the weight.
- Pressure cook allowing for 3-4 whistles. After the pressure is fully released, garnish the kurma with coriander leaves
- Serve the delicious Bottlegourd Kurma with Indian Bread like Roti, chapati etc
