Most of us, especially the children love Ladysfinger. So this would be a huge hit dish in most of the homes. Even in restaurants, most of us order bindi Masala as one side dish for Roti / Naan.

Ingredients:
Ladysfinger | 300gms |
Onion | 1, Finely Chopped |
Tomato | 3, Pureed |
Peanuts | 3/4 Cup* |
Sesame Seeds | 1 Tablespoon |
Turmeric Powder | 1/2 teaspoon |
Red Chilli Powder | 1/2 teaspoon |
Green Chilli | 2, Finely Chopped |
Finely Chopped Ginger | 1 Teaspoon |
Finely Chopped Garlic | 1 Teaspoon |
Roasted Cumin Powder | 1/2 Teaspoon |
Coriander Powder | 1 Teaspoon |
Pepper Powder | 1/2 teaspoon |
Red Chilli Powder | 1/2 teaspoon |
Garam Masala | 1/2 Teaspoon |
Cinnamon Powder** | 1/4 Teaspoon |
Cloves Powder** | 1/4 Teaspoon |
Salt | To taste |
Oil | 5 Tablespoon |
Fennel Seeds | 1 Teaspoon |
* 1 Cup = 250ml
** Cloves and Cinnamon, we can use whole masala instead of powder

Method:
- Wash, dry each ladysfinger with a tissue and then chop it into big pieces atlas 1" long. Set it aside
- Dry Roast peanuts and sesame seeds, cool it and grind it to a smooth powder
- Heat 2 tablespoon of oil and add chopped ladysfinger and sauté the ladysfinger along with turmeric powder, red chili powder and a pinch of salt. Cover and cook the ladysfinger till the it becomes soft and light brown. Set this sautéed ladysfinger aside
- Heat 3 Tablespoon of oil. Add Fennel seeds and allow it to sputter. Add chopped green chili, ginger and garlic and sauté for couple of minutes
- Add chopped onions and sauté till the onions become light brown. Add the spice powders one by one ( Roasted Cumin powder, Coriander powder, Pepper Powder, Red Chilli Powder, Garam Masala, Cinnamon Powder and cloves Powder) . Saute the spice powders for few seconds
- Add Peanut-Sesame seeds Powder and mix well. Also add Tomato Puree and mix well
- Add turmeric powder and salt and also 1/2 cup of water and stir well. Allow the Tomato puree to cook till the oil oozes out
- Then, add sautéed ladysfinger to the gravy and gently stir so that the ladysfinger gets mixed up with the gravy. Keep in flame for 2 minutes and then switch off the flame. If the gravy is thick, just add little water and make it like a gravy
- Serve the delicious Bhindi Masala with Indian Breads and enjoy the taste!
