Bhindi Masala Recipe | Okra Masala Recipe

Bhindi Masala Gravy, a popular masala curry which is a perfect complement for Indian Roti / Naan etc. Ladysfinger are sautéed and added to onion-tomato based gravy along with many flavor full Indian Spices. Most of us, especially the children love Ladysfinger. So this would be a huge hit dish in most of the homes. Even in restaurants, most of us order bindi Masala as one side dish for Roti / Naan.

Ingredients:
Ladysfinger300gms
Onion1, Finely Chopped
Tomato3, Pureed
Peanuts 3/4 Cup*
Sesame Seeds1 Tablespoon
Turmeric Powder1/2 teaspoon
Red Chilli Powder1/2 teaspoon
Green Chilli2, Finely Chopped
Finely Chopped Ginger1 Teaspoon
Finely Chopped Garlic1 Teaspoon
Roasted Cumin Powder 1/2 Teaspoon
Coriander Powder1 Teaspoon
Pepper Powder1/2 teaspoon
Red Chilli Powder1/2 teaspoon
Garam Masala1/2 Teaspoon
Cinnamon Powder**1/4 Teaspoon
Cloves Powder**1/4 Teaspoon
SaltTo taste
Oil5 Tablespoon
Fennel Seeds1 Teaspoon

* 1 Cup = 250ml
** Cloves and Cinnamon, we can use whole masala instead of powder

Method:
  1. Wash, dry each ladysfinger with a tissue and then chop it into big pieces atlas 1" long. Set it aside
  2. Dry Roast peanuts and sesame seeds, cool it and grind it to a smooth powder

  3. Heat 2 tablespoon of oil and add chopped ladysfinger and sauté the ladysfinger along with turmeric powder, red chili powder and a pinch of salt. Cover and cook the ladysfinger till the it  becomes soft and light brown. Set this sautéed ladysfinger aside

  4. Heat 3 Tablespoon of oil. Add Fennel seeds and allow it  to sputter. Add chopped green chili, ginger and garlic and sauté for couple of minutes 

  5. Add chopped onions and sauté till the onions become light brown. Add the spice powders one by one ( Roasted Cumin powder, Coriander powder, Pepper Powder, Red Chilli Powder, Garam Masala, Cinnamon Powder and cloves Powder) . Saute the spice powders for few seconds

  6. Add Peanut-Sesame seeds Powder and mix well. Also add Tomato Puree and mix well

  7. Add turmeric powder and salt and also 1/2 cup of water and stir well. Allow the Tomato puree to cook till the oil oozes out 

  8. Then, add sautéed  ladysfinger to the gravy and gently stir so that the ladysfinger gets mixed up with the gravy. Keep in flame for 2 minutes and then switch off the flame. If the gravy is thick, just add little water and make it like a gravy

  9. Serve the delicious Bhindi Masala with Indian Breads and enjoy the taste!
