Bajji is an easy Indian evening snack. Most of us just take a potato or raw banana or onion and make bajji out of it. With many veggies, we can try making bajji. My MIL used to make Brinjal Bajji. I happen to taste Zucchini (சீமை சுரைக்காய்) bajji in my neighbor's home. It was so tasty, so next day, I tried Zucchini bajji in my kitchen and it turned out awesome. Zucchini | 1 |
Gram Flour (Besan) | 1 Cup |
Rice Flour | 1/2 cup |
Red Chilli Powder | 1 Teaspoon |
Baking Soda | 1/8 Teaspoon |
Asafoetida | 1/4 teaspoon |
Salt | To taste |

- Wash and slice the Zucchini and keep it aside
- Heat oil in a pan for deep frying the zucchini banjo
- In a mixing bowl, take gram flour, rice flour, red chili powder, salt, asafoetida and baking soda and mix everything well
- Add water little by little and make it to a batter. The consistency of the batter should be like dosa batter
- Test the hotness of oil by dropping a pinch of batter. If the batter rises immediately with sizzling sound, then oil is ready
- Add zucchini slices and coat it completely and gently drop it in oil. Deep fry the bajjis on both the sides till they are golden brown and all the bubbles ceases
- Serve the delicious crispy Zucchini Fritters and enjoy the evening!
