Vatha Kuzhambu is always delicious. We can make vatha kuzhambu with dried sundakkai or manathakali vathal or we can also add veggies such as onions, ladysfinger, carrot etc. Bitter gourd, we all know is a very healthy vegetable. A must to include veggie especially for Diabetic patients. Adding bitter gourd, makes this vatha kuzhambu more healthy and delicious. I have added little jaggery to bring out the tanginess of the tamarind. Mix this healthy Bittergourd Vatha Kuzhambu with rice and you would surely want more and more!

Bitter gourd Vatha Kuzhambu Recipe (Pagarkkai Vatha Kuzhambu) |
Ingredients:
Tamarind | 1 lemon size |
Bitter gourd Pieces | 1/2 Cup |
Sambar Powder | 2 teaspoon |
Baby onions (Shallots) | 10 |
Garlic | 5-6 cloves |
Salt | To taste |
Grated Jaggery | 1 tablespoon |
Rice Flour | 1 tablespoon |
Gingerly Oil | 2 tablespoon |
Mustard Seeds | 1 teaspoon |
Thur Dal | 1 teaspoon |
Fenugreek Seeds | 1/4 teaspoon |
Curry Leaves | Few |
- Heat oil in a pan. Add mustard seeds and allow it to sputter. Then, add thur dal followed by fenugreek seeds and fry till dal turns golden brown color
- Then add few curry leaves. Next, add shallots, garlic and saute till onions transparent
- Then, add bitter gourd pieces and saute for 2 minutes. Add sambar powder and mix well
- Add tamarind extract along with salt and allow it to boil for 10 mins in low flame
- Add jaggery and mix well. Finally take rice flour and add 3 tablespoon of water and mix well to make a paste.
- Add this rice flour paste to the kuzhambu and mix well. Keep in flame for another 5 minutes and then switch off the flame. IF the kuzhambu is very thick, adjust the consistency by adding little water
- Serve the delicious Bittergourd Vatha Kuzhambu (Pagarkkai vatha kuzhambu) with rice!
